Awesome Lemon Chicken and Pasta
In the effort to try to create healthier meals that don't taste like a~~, I think this is a winner. The combination of lemon, capers, kalamata olives and marsala together with the herbs just adds such flavor. It has nothing high fat or high calorie in it, just great tasting. There are a couple ingredients you might not have in your pantry, but once you try this recipe, you will definitely keep them stocked. Here it is, Lemon Chicken and Pasta!
Ingredients
3 cloves minced garlic
2 tblsp. minced onion
3 tblsp. olive oil
1 tblsp. butter
1 whole lemon juiced and 1/4 tsp. lemon zest
1/2 c. chicken broth (homemade or NO salt)
1 cup cooked whole wheat angel hair or your favorite pasta
1/4 c. marsala wine (can substitute sherry or sweet white wine)
1 large or 2 small chicken breasts, pounded thin or butterflied thin
capers
kalamta olives halved
dill
thyme
salt/pepper
Saute garlic and onion in olive oil and butter, cook until soft, about 3 minutes
add dill, thyme, salt and pepper
Add chicken breast and brown on both sides, remove from pan
Add chicken broth, marsala, bring to a boil and reduce heat and cook about 10 minutes to thicken sauce
Add chicken back to pan with capers, olives and lemon juice and zest and pasta
Heat through about 3 to 5 minutes.
It is fabulous!!! So good. Let me know if you try it.

Whole wheat pasta with sweet andspicy veggies
Deciding what to make for lunch, I had a bunch of left over stuff and came up with this delicious whole wheat pasta with chicken veggie sweet and spicy sauce. So easy, here it is. This is what I used, but feel free to add whatever you like. Sorry all, but I don't measure much, so I will try to estimate quantities.
Ingredients:
2 tbsp. olive oil, give or take, more if it is a little dry
2 cloves garlic, rough chop
Broccoli, about 1 1/2 to 2 cups
1/2 c. each red, yellow, orange peppers (I used the small sweet peppers)
1 cup snap peas
1 cup cooked chicken
can water chestnuts
1 1/2 c. chicken broth
1/4 c. sweet white wine, or any white wine you have on hand
1/8 tsp. sesame oil
3 tblsp. rice vinegar (Or apple cider if you don't have rice)
1/4 cup honey
1 tblsp. red curry paste (easy to find in grocery store, I use it on a lot of stuff)
soy sauce
whole wheat pasta cooked about 1 cup.
Heat pan, add olive oil and garlic, cook 2 minutes
Add veggies and saute for 3-4 minutes
Add chicken, heat
remove from pan
Add chicken broth, soy sauce, wine, sesame oil, curry paste, rice vinegar, and honey bring to boil and cook 5 minutes.
Add cooked pasta and veggies back to pan and heat.
That's it! Enjoy it is awesome.
