Jicama and celery root slaw with blood orange vinaigrette







Experimenting in the kitchen on Sunday morning is one of my favorite things to do. Bought blood oranges yesterday and was so excited to try them out. For those who have never tried them, Yes, they are as wonderful as you may imagine. Jicama and celery root are two my favorite veggies, and together they make a great slaw. Low in calorie and high in nutrition, check it out. Here is what I did.

Vinaigrette:
Juice of one blood orange
juice of half a lemon
Dijon mustard (to taste)
Salt, pepper, garlic powder
Whisk and add 1 to 2 tablespoons of olive oil

Shred celery root and jicama about 1 cup each.

Add to vinaigrette; that's it.
